Prepare juices

Measure and combine the fresh orange juice, lemon juice and lime juice in a medium mixing pitcher. Stir gently to combine.

Muddle Mint

Place the 10 fresh mint leaves in the bottom of a sturdy glass or a cocktail shaker. Add the simple syrup. Gently muddle 8–10 times — press just enough to bruise the leaves and release oils but not shred them.

Add the combined citrus juices to the muddled mint and simple syrup. Stir / shake gently for 10–15 seconds to infuse the citrus with the mint aroma.

Assemble the drink

Fill two serving glasses with ice (about 1 cup each). Divide the citrus-mint mixture evenly between the two glasses.

Top each glass with 1 cup (about 8 oz / 240 ml) of chilled sparkling water or club soda. Gently stir once to combine — be careful to preserve the bubbles.

Taste and adjust: if you want it sweeter, add up to 1 teaspoon extra simple syrup per glass; for a touch of depth, add 1 tsp non-alcoholic grapefruit bitters or 1/2 tsp orange blossom water to each glass (optional).

Garnish each glass with 2 orange slices, 2 lime wheels and a sprig of mint. Serve immediately with a short spoon or straw.

If making in a pitcher for a group, keep the sparkling water chilled separately and add right before serving to preserve fizz. Yield above is scalable.
