Prepare spices and garlic
Measure out chili powder, smoked paprika, cumin, oregano, coriander, salt, and pepper. Mince the garlic finely. If using chipotle in adobo, mince it finely and stir together with the white vinegar to make a marinade.
Combine with meat
Place the ground pork (or pork/beef mix) into a large bowl. Add the measured spices, minced garlic, and the vinegar (with minced chipotle if using). Using clean hands or a sturdy spoon, mix thoroughly until the spices are evenly distributed and the mixture becomes slightly tacky, about 2–3 minutes. Overmixing for texture beyond uniform incorporation is not necessary.
Rest to develop flavor
Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably 2–4 hours or overnight. This allows the vinegar and spices to meld into the meat for authentic chorizo flavor.
Cook
Heat 1 tablespoon olive oil in a skillet over medium heat. Add the chilled seasoned meat, breaking it up with a spatula into small pieces. Cook, stirring occasionally, until browned and cooked through, about 8–10 minutes. Taste and adjust seasoning with a pinch more salt or pepper if needed.
Use or store
Use the cooked chorizo immediately in tacos, burritos, egg dishes, or other recipes. Uncooked seasoned sausage can be portioned and tightly wrapped in plastic and refrigerated up to 2 days or frozen up to 3 months. If freezing, label with the date.
