Lavender Syrup
Combine and heat
In a small saucepan, combine 1 cup water and 1 cup granulated sugar. Stir over medium heat until the sugar dissolves and the mixture reaches a gentle simmer.
Infuse
Add 2 tablespoons dried culinary lavender buds and 1 teaspoon fresh lemon zest to the simmering sugar syrup. Reduce heat to low and simmer gently for 3 minutes, stirring occasionally.
Steep
Remove the pan from heat and allow the lavender and zest to steep in the syrup for 20 minutes to extract aroma and flavor without bitterness.
Strain and cool
Strain the syrup through a fine mesh sieve or cheesecloth into a heatproof jar or bottle, pressing lightly on the solids to extract liquid. Discard solids. Let the syrup cool to room temperature, then refrigerate until chilled. Syrup keeps in the refrigerator up to 2 weeks.
Drink Assembly
Fill a highball or Collins glass with about 1 cup ice.
Pour 1 ounce fresh lemon juice over the ice.
Add 3/4 ounce chilled lavender syrup. If you prefer a sweeter or stronger floral note, increase syrup to 1 ounce.
Top with 4 ounces club soda (or sparkling water). Pour gently to preserve carbonation.
Stir once gently with a bar spoon to combine, being careful not to flatten the soda.
Garnish with a lemon wheel or twist and a sprig of fresh lavender if available. Serve immediately.
