Chicken Nuggets
Prepare chicken
Trim any fat from the chicken breasts and cut into 1 to 1.25-inch bite-size pieces (nugget-sized). Pat dry with paper towels.
Set up breading stations
Place the flour in a shallow bowl and season with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 teaspoon garlic powder. In a second bowl, whisk the egg with 1 tablespoon milk. In a third bowl, combine breadcrumbs, grated parmesan (if using), 1/2 teaspoon salt, 1/4 teaspoon paprika, and remaining garlic powder and pepper.
Bread the nuggets
Working in batches, dredge each chicken piece in the seasoned flour, shaking off excess, then dip into the egg wash, and finally press into the breadcrumb mixture until well coated. Place coated nuggets on a plate.
Cook the nuggets
Heat 1/2 cup vegetable oil in a large skillet over medium heat until shimmering (about 325–350°F / 160–175°C if using a thermometer). Add nuggets in a single layer without crowding. Cook 2.5–3 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Transfer to a paper towel–lined plate to drain. Keep warm in a low oven (200°F / 95°C) if making multiple batches.
French Fries
Prepare potatoes
Peel (optional) and cut potatoes into 1/4- to 1/2-inch sticks. Rinse well under cold water to remove surface starch, then dry thoroughly with a clean towel or paper towels. Dry fries help them crisp.
Fry the potatoes
Pour about 1 cup vegetable oil into a heavy skillet or pot (enough to come about 1/2 inch up the side). Heat over medium-high until oil reaches about 350°F (175°C) or shimmering. Carefully add potatoes in a single layer in batches and fry 4–6 minutes, stirring occasionally, until edges are golden and centers are tender. Remove with a slotted spoon to paper towels to drain. If you want extra-crispy fries, fry a second time for 1–2 minutes at 375°F (190°C).
Season
Immediately season with 1 teaspoon salt (adjust to taste), 1/4 teaspoon pepper, and optional 1/2 teaspoon paprika or seasoning salt. Toss gently and serve hot.
Sauce & Drink
Serve a small chilled soda or a small cup of juice with ice cubes if desired.
Plate the meal: 5–6 chicken nuggets, a serving of fries (about 1 cup), dipping sauce, and the drink. Let food cool slightly for children and check nugget temperature before serving.
