Method

Preparation

1

Chill glass

If possible, chill a highball or Collins glass in the freezer for 5–10 minutes before building the drink. Alternatively, fill the glass with ice while you prepare ingredients and discard the melting ice before serving.

2

Build the drink

Add 6 large ice cubes to the chilled glass. Pour in 2 oz Crater Lake gin and 1/2 oz Campari over the ice.

3

Top with tonic

Gently top the mixture with 4 oz tonic water. Pour slowly over the back of a bar spoon or down the side of the glass to preserve carbonation and create a layered look.

4

Stir lightly

Give the drink one or two gentle stirrings with a bar spoon to integrate the gin and Campari with the tonic without losing too much effervescence.

Garnish & finish

5

Express the orange oil by holding the orange peel with the outside facing down over the drink and giving it a firm twist so aromatic oils spray onto the surface. Optionally rub the peel around the rim of the glass for extra aroma, then drop the twist into the drink.

6

Lightly slap the rosemary sprig between your palms (or run your fingers along it) to release its aroma, then place it upright or floating in the glass as a fragrant garnish.

7

Serve immediately with a short straw or without. Recommend tasting and adjusting future pours (more tonic or more gin/Campari) to personal preference.
