Warm the glass

Preheat a heatproof Irish coffee glass (or a 10–12 oz/300–350 ml mug) by filling it with hot water. Let sit 30 seconds, then discard the water and warm glass remains. This prevents the drink from cooling quickly.

Add the sugar to the warmed glass. Pour in the hot coffee, leaving about 1.5 inches (3–4 cm) of space at the top for the cream. Stir vigorously until the sugar is fully dissolved.

Pour in the Jameson Irish whiskey and stir once gently to combine. Taste and adjust sweetness if desired by adding a little more sugar (½ tsp increments).

Chill a small mixing bowl and beaters (or use a chilled metal bowl) for best results.

Combine the cold heavy cream, powdered sugar, and vanilla extract in the chilled bowl. Whip by hand with a whisk or with an electric mixer on medium speed until soft peaks form. The cream should be slightly thickened but still pourable — you want it able to float on top of the coffee rather than sink in.

Using the back of a spoon held just above the surface of the coffee, gently pour or spoon the whipped cream so it floats as a distinct layer on top of the hot coffee. Aim for about ¼–⅓ inch (6–8 mm) of cream on top.

Optionally grate a small pinch of fresh nutmeg or dust a little cocoa powder over the cream for aroma and presentation.

Serve immediately with a small spoon. Instruct drinkers to sip the coffee through the cream so they experience the contrast of hot, sweet coffee and cool whipped cream.
