Fish tacos
Prepare the fish
Pat fish fillets dry with paper towels and cut into 1/2-inch strips or bite-size pieces. In a bowl combine flour, smoked paprika, ground cumin, garlic powder, kosher salt and black pepper. Toss fish pieces gently in the spice-flour mixture to coat evenly.
Cook the fish
Heat 2 tablespoons oil in a large nonstick skillet over medium-high heat until shimmering. Add fish pieces in a single layer (work in two batches if necessary). Cook 2–3 minutes per side, turning once, until fish is opaque and flakes easily (internal temperature 145°F / 63°C). Remove to a plate and drizzle with 1 tablespoon fresh lime juice.
Make the sauce
In a small bowl whisk together sour cream (or Greek yogurt), mayonnaise, hot sauce (if using) and the remaining 1 teaspoon lime juice (reserve lime wedges). Taste and adjust salt or hot sauce to preference.
Assemble tacos
Warm tortillas in a dry skillet over medium heat 20–30 seconds per side or wrap in foil and warm in a 350°F (175°C) oven for 5–8 minutes. Divide shredded cabbage among tortillas, add fish, drizzle with the cream sauce, and sprinkle with chopped cilantro. Serve with extra lime wedges.
Rice and beans (side)
Cook rice
Rinse 1 cup rice under cold water until water runs clear. In a medium saucepan combine rinsed rice, 2 cups water, 1 teaspoon oil and 1/2 teaspoon salt. Bring to a boil over medium-high heat, reduce to low, cover and simmer 15 minutes. Remove from heat and let stand covered 5 minutes, then fluff with a fork.
Heat beans
While rice cooks, heat a small saucepan over medium heat with a tiny splash of oil or a quick spray. Add minced garlic and cook 30 seconds until fragrant. Add drained black beans, 1/4 teaspoon ground cumin, and 1 teaspoon lime juice. Cook, stirring, until beans are warmed through, 3–4 minutes. Taste and season with salt and pepper as needed.
Plate side
Serve a scoop of rice with a portion of warm black beans alongside the tacos.
Beverages
Place soda or juice in glasses over ice if desired and serve chilled alongside the tacos and rice & beans.
