Method
Brown sugar cinnamon syrup
Make syrup
In a small saucepan combine 2 tbsp dark brown sugar and 2 tbsp water over medium-low heat. Stir until sugar dissolves and mixture comes to a gentle simmer (about 2–3 minutes).
Add 1 tsp ground cinnamon and 1 tsp vanilla extract, whisk to combine and simmer another 30 seconds to bloom the cinnamon. Remove from heat and let cool slightly. Transfer to a small container; syrup will thicken as it cools. Yield: about 3 tbsp.
Prepare milk
Measure 3 oz cold whole milk. Steam or heat milk to 140–150°F (60–65°C) while texturing to create a velvety microfoam: hold pitcher at a slight angle, introduce steam to stretch briefly, then tuck wand to create fine crema. If you don't have a steamer, heat gently on stove until warm (do not boil) and froth with a handheld frother to produce fine foam.
Pull espresso & assemble
Pull two shots (about 2 oz) of espresso directly into a pre-warmed 4–6 oz glass or cup.
Add 1–1.5 tbsp of the warm brown sugar cinnamon syrup to the espresso and stir thoroughly to dissolve and integrate. Taste and adjust: use 1 tbsp for lightly sweet, 1.5 tbsp for sweeter.
Slowly pour the textured milk over the espresso-syrup mixture, holding back foam with a spoon at first if needed, then finish with a thin layer of microfoam. The finished drink should be about 4–5 oz total.
Garnish & optional kick
Lightly dust the top of the cortado with 1/4 tsp ground cinnamon. For a spicy kick, add a very small pinch (a dash) of cayenne pepper or freshly ground black pepper on top — start with a tiny amount and adjust to taste.
If desired, moisten the rim of the glass with a drop of syrup and dip in 1 tsp brown sugar for a sweet rim.
Serve immediately while hot.
