Cocktail

Method

Prepare cocktail base

Chill glass

Place a coupe or flute in the freezer for 5–10 minutes or fill with ice water while you prepare the cocktail to ensure it’s well chilled.

Combine spirits and citrus

In a cocktail shaker, add 2 tablespoons (approximately 1 oz) London dry gin, 0.75 oz fresh lemon juice, 0.5 oz simple syrup, 0.25 oz orange liqueur, and 2 dashes Angostura bitters.

Add ice and shake

Fill the shaker with ice (enough to three-quarters fill). Secure the lid and shake vigorously for 10–12 seconds until the outside of the shaker is cold and slightly frosted.

Strain

Discard ice/water from the chilled glass if used. Double-strain the shaken mixture (using a Hawthorne strainer and a fine mesh strainer) into the chilled coupe or flute to remove small ice shards and lemon pulp.

Finish & garnish

Top with sparkling wine

Slowly pour 3 oz of well-chilled Champagne or dry sparkling wine down the side of the glass so the drink retains some effervescence and a gentle foam head.

Express lemon twist and garnish

Take the lemon twist and hold it skin-side down over the drink; give it a firm twist to express oils over the surface, then rub the rim with the peel and drop it into the drink or thread it on the edge. If using, gently slap the thyme sprig between your palms to release aroma and rest it on the surface.
