Prepare crab

If using frozen crab legs, thaw overnight in the refrigerator or run under cold water until flexible. Pat dry with paper towels. Using kitchen shears or a sharp knife, crack the shells partially along the length to expose the meat for easier steaming and eating.

Heat pan

Place a large, heavy skillet (preferably stainless steel or cast iron) over medium heat. Add 1 tablespoon olive oil and 1 tablespoon butter. Allow the butter to melt and foam but not brown.

Sauté aromatics

Add the minced garlic and minced shallot to the pan. Sauté for 1 to 1 1/2 minutes until fragrant and translucent, stirring constantly so garlic does not burn.

Deglaze

Pour in the dry white wine and use a wooden spoon to scrape any fond from the pan. Let the wine simmer briskly for about 2 minutes to reduce slightly and cook off most alcohol.

Add crab

Nestle the crab legs into the skillet. Add the remaining 1 tablespoon olive oil and 2 tablespoons butter around the crab. Spoon pan juices over the shells. Cover the pan with a tight-fitting lid and steam for 4 to 5 minutes to heat through (if crab is already cooked) or until internal temperature reaches 60–63°C (140–145°F) if using raw/uncooked crab.

Finish sauce

Remove the lid. Carefully transfer the crab to a platter and tent with foil to keep warm. Turn heat to low. Add the remaining 1 tablespoon butter to the pan along with lemon juice, lemon zest, smoked paprika, capers, chopped parsley, chives, salt and pepper. Stir and simmer for 1 minute to combine and slightly thicken. Taste and adjust seasoning.

Coat crab & serve

Return the crab to the pan or spoon the warm sauce generously over the crab on the platter so all pieces are coated. Sprinkle chili flakes if using and garnish with microgreens or extra parsley. Serve immediately with lemon wedges and crusty bread to soak up the sauce.

Optional: Toasted baguette

Preheat oven to 200°C (400°F). Arrange baguette slices on a baking sheet, brush lightly with remaining olive oil (if any) or a little butter, and toast for 6–8 minutes until golden and crisp. Serve alongside the crab to mop up sauce.
