Burger Patties & Seasoning

Portion and form

Divide the 1 lb 80/20 ground beef into two equal portions (about 8 oz each). Gently form each portion into a loose ball — do not overwork the meat.

Preheat cooking surface

Heat a heavy skillet or cast-iron griddle over medium-high heat until very hot (about 4–6 minutes). Add 1 tbs vegetable oil and let it shimmer.

Smash and sear

Place one beef ball on the hot surface and immediately press down firmly with a heavy spatula or a dedicated burger press to flatten to about 3/8" thickness. Season the exposed top with about 1/4 tsp kosher salt and a pinch of black pepper. Cook, undisturbed, for 2–3 minutes until the edges are deeply browned and crisp.

Flip and season

Flip the patty, season the new top with another 1/4 tsp salt and pinch of pepper, then immediately place a slice of provolone on the hot patty. Cook for 30–60 seconds, just until the cheese begins to melt and the second side is cooked through. Repeat with the second patty.

Buns & Cheese

While the second patty is cooking, spread 1 tsp softened butter evenly on the cut faces of each bun. Place the buns butter-side down on the hot skillet or griddle and toast 30–45 seconds until golden and set aside.

House Sauce

Make the sauce by whisking together 3 tbs mayonnaise, 1 tbs ketchup, 1 tsp Dijon mustard, 1/2 tsp pickle brine, 1/4 tsp hot sauce (optional) and 1/4 tsp smoked paprika in a small bowl. Taste and adjust seasoning; add more pickle brine for tang or hot sauce for heat. This yields enough for both burgers.

Toppings

Assemble toppings: spread about 1–1.5 tbs house sauce on the bottom bun. Add a handful (about 1/4 cup) of shredded lettuce, place the cheesed smash patty on top, then arrange the thinly sliced onion and 2 house hot pickle slices over the patty. Add additional sauce to the top bun if desired, then close the burger.

Finish & Serve

Serve each WW 8 oz. Smashburger hot, immediately after assembly. If making both patties for one burger (double), stack both patties with cheese between and adjust toppings the same. Provide extra pickles and sauce on the side if desired.
