Vinegar Peppers (Quick Pickle) & Prep

Make quick pickled peppers

Combine white wine vinegar, water, sugar, and 1/2 tsp kosher salt in a small saucepan. Add smashed garlic if using. Bring to a gentle simmer just until sugar and salt dissolve, about 1–2 minutes. Remove from heat, add sliced peppers, and let cool to room temperature. Transfer peppers and brine to a jar and refrigerate; they’re ready in 15–30 minutes and better after 1 hour.

Prepare calamari

Pat calamari rings and tentacles thoroughly dry with paper towels. Drying is essential for crisping. Trim any remaining cartilage if needed. Place calamari in a bowl and season lightly with 1/2 tsp kosher salt and 1/4 tsp black pepper; toss to coat.

Set up breading stations

In a shallow bowl mix flour and cornstarch. In a second bowl whisk eggs with 2 tbsp cold water to make an egg wash. In a third shallow bowl combine breadcrumbs, chopped pistachios, remaining 1/2 tsp salt, 1/4 tsp black pepper, and smoked paprika. Ensure pistachios are finely chopped so they adhere well.

Frying

Heat oil

Pour 3–4 cups neutral oil into a deep skillet or medium saucepan leaving at least 2 inches headspace. Heat oil over medium-high to 350°F (175°C). If you don’t have a thermometer, test with a small pinch of breading—if it sizzles and browns in ~30 seconds, oil is ready.

Bread the calamari

Work in batches of 6–8 rings to avoid overcrowding. Dredge calamari first in flour-cornstarch mixture, shaking off excess. Dip into egg wash, letting excess drip back. Press calamari into the pistachio-breadcrumb mixture, coating evenly and pressing gently so nuts adhere. Place coated pieces on a wire rack while you finish coating the rest.

Flash fry

Fry in batches: gently lower 6–8 pieces into hot oil and fry 60–90 seconds until golden brown and just crisp (calamari cooks quickly; avoid overcooking). Stir or turn once so breading browns evenly. Remove with a slotted spoon to a paper towel–lined tray or wire rack; season immediately with a light pinch of kosher salt. Maintain oil temperature between batches by allowing it to return to 350°F before adding the next batch.

Finish

If making ahead for service, keep cooked calamari on a wire rack in a low oven (200°F / 95°C) for up to 10–15 minutes to keep warm and crisp without continuing to cook through.

Dipping Sauce & Plating

Prepare dipping sauce (optional)

Whisk together mayonnaise, Greek yogurt, lemon juice, minced garlic, hot sauce (if using), salt, and pepper in a small bowl. Taste and adjust seasoning. Chill until ready to serve.

Plate and garnish

Arrange pistachio-crusted calamari on a serving board or platter. Scatter pickled peppers over and around the calamari (drain excess brine). Sprinkle finely chopped parsley and serve lemon wedges on the side. Offer the dipping sauce in a small bowl alongside. Serve immediately so calamari remains crisp.
