Prepare shaker

Fill a cocktail shaker halfway with ice (about 1 cup) to chill and dilute the drink slightly.

Combine spirits and lime

Add 2 oz Whitley Neill Handcrafted Dry Gin, 0.75 oz St. Germain, and 0.5 oz fresh key lime juice into the shaker. If you prefer a sweeter cocktail, add 0.25 oz simple syrup.

Shake

Secure the shaker lid and shake vigorously for 10–12 seconds until the outside of the shaker is chilled and slightly frosted.

Strain over ice

Fill a highball glass or large wine glass with fresh ice. Double-strain the shaken mixture into the glass to keep the drink bright and free of pulp or small ice shards.

Top with tonic

Gently pour 3 oz Fever-Tree Sparkling Grapefruit Tonic over the back of a spoon or directly into the glass to preserve carbonation and create a delicate layered effervescence. Stir once gently with a bar spoon to integrate.

Garnish & Serve

Garnish the cocktail with a key lime wheel or wedge on the rim. Optionally slap a spruce of fresh thyme between your palms to release aromatics and rest it on top of the drink.

Serve immediately while the tonic is still effervescent. Provide a straw if desired.
