Preheat and dry

Preheat your oven to 425°F (220°C). Pat the chicken wings very dry with paper towels — removing surface moisture helps them crisp.

Season and coat

Place the wings in a large bowl. Add kosher salt, black pepper, garlic powder, and baking powder. Toss thoroughly so each piece is evenly coated. The baking powder helps create a crispy skin when baked.

Arrange and roast

Arrange wings in a single layer on a wire rack set over a baking sheet (line the sheet with foil for easy cleanup). Roast in the preheated oven for 35–45 minutes, flipping once at 20–25 minutes, until the wings are deep golden brown and crisp and an instant-read thermometer in the thickest part reads 165°F (74°C). If you prefer extra crispness, broil 1–2 minutes at the end, watching carefully to avoid burning.

Make the glaze

While the wings roast (about 10–15 minutes before they finish), combine honey, sriracha, soy sauce, rice vinegar, butter, and lime juice in a small saucepan over medium-low heat. Stir until the butter melts and the mixture is smooth. Bring to a gentle simmer, then lower heat and simmer 2–3 minutes to slightly thicken. Taste and adjust heat or sweetness: add more sriracha for heat or a teaspoon of water if too thick.

Toss wings in glaze

When wings are fully cooked and crisp, transfer them to a clean large bowl. Pour 3/4 of the warm glaze over the wings and toss gently to coat each piece. Reserve the remaining glaze for serving (you can rewarm it briefly if needed).

Blue Cheese Dipping Sauce

Combine sauce ingredients

In a small bowl, combine blue cheese crumbles, mayonnaise, sour cream, buttermilk, lemon juice, black pepper, and kosher salt. Stir well, mashing a few of the blue cheese crumbles to incorporate creaminess while leaving some texture. Taste and adjust seasoning; add a splash more buttermilk if you prefer a thinner dip.

Chill (optional)

Refrigerate the dip for at least 15 minutes if time allows — this helps flavors meld. Bring to cool room temperature before serving if desired.

Finish & Serve

Arrange glazed wings on a platter. Sprinkle toasted sesame seeds and sliced scallions over the wings. Serve immediately with the reserved honey-sriracha glaze on the side and the blue cheese dipping sauce. Estimated serving suggestion: 2 lb wings serve 4 as an appetizer or 2 as a hearty tavern main.
