Escargot and Butter
Prepare butter base
Soften the unsalted butter to room temperature (about 20–30 minutes) or gently warm in a bowl set over barely simmering water until pliable. In a medium bowl, combine the softened butter with the finely minced garlic, minced shallot, chopped parsley, fennel pollen, lemon juice, dry white wine, sea salt, and black pepper. Stir thoroughly until evenly combined and the mixture is homogeneous.
Warm escargot
If using canned/jarred escargot, drain them well and pat dry with paper towels. Briefly warm the escargot in a small skillet over medium heat with 1 teaspoon of the prepared garlic butter just until they are heated through (about 1–2 minutes). This step helps render any residual brine and improves flavor. Remove from heat and set aside.
Assemble in shells or baking dish
If you have escargot shells: place one warmed snail into each shell and fill the remainder of the shell with the garlic-fennel butter so it surrounds the snail. If you do not have shells: use a small gratin dish or a 24-well escargot baking dish; place one snail into each well and spoon enough garlic butter over and around each snail to cover. Reserve a little butter for topping (about 1–2 tablespoons).
Bake
Preheat the oven to 400°F (200°C). Arrange the filled shells or the escargot dish on a rimmed baking sheet. Dot any reserved butter on top of the filled shells/wells. Bake for 8–10 minutes, until the butter is bubbling and the top is lightly golden but not burnt. Baking time may vary slightly depending on vessel; watch for bubbling and aromatic garlic.
Finish
Remove from oven. Immediately sprinkle the baked escargot with the remaining 1/4 teaspoon fennel pollen to preserve its aroma. Let rest 1 minute before serving so the butter settles slightly but remains hot.
Bacon Crisp
While the oven preheats, lay the bacon slices on a rimmed baking sheet lined with foil or parchment. Bake in the same 400°F (200°C) oven for 10–12 minutes, or pan-fry in a skillet over medium heat, turning occasionally, until crisp. Transfer to paper towels to drain and cool slightly, then break into small pieces. Use the bacon pieces to garnish individual escargot servings — they add a smoky crunch that complements the garlic-fennel butter.
To Serve
Toast slices of baguette or country bread until golden. Spoon hot escargot and plenty of garlic-fennel butter onto each toast or serve the escargot in their shells/dish with toast on the side for dipping. Scatter crisp bacon pieces over the escargot and butter, and offer extra toasted bread to sop up the butter. Serve immediately while very hot.
