Infuse the Mezcal

If you want to enhance the flavor of your Banhez mezcal, infuse it with Calabrian chiles. Place the mezcal in a glass jar with a few Calabrian chiles and let it steep for at least 24 hours, up to 48 hours, depending on the desired spice level. Strain out the chiles before using.

Prepare the Pineapple Juice

To create the pineapple acid, combine fresh pineapple juice with a small amount of citric acid or lemon juice to achieve the desired acidity. Adjust to taste and strain to remove any pulp.

Mixing the Cocktail

Combine Ingredients

In a cocktail shaker, combine 2 oz of the infused Banhez mezcal, 1 oz of Cocchi Americano Rosso, 1 oz of the acidified pineapple juice, and 0.5 oz of Falernum.

Shake

Fill the shaker with ice and shake vigorously for about 15 seconds until well-chilled.

Strain

Strain the mixture into a chilled cocktail glass.

Garnish

Garnish the cocktail with a piece of Calabrian chile and sprinkle a pinch of Tajin on top for an extra kick and flavor.
