Prepare the Pineapple Juice
To create the pineapple acid, combine fresh pineapple juice with a small amount of citric acid or lemon juice to achieve the desired acidity. Adjust to taste and strain to remove any pulp.
Mixing the Cocktail
Combine Ingredients
In a cocktail shaker, combine 2 oz of the infused Banhez mezcal, 1 oz of Cocchi Americano Rosso, 1 oz of the acidified pineapple juice, and 0.5 oz of Falernum.
Shake
Fill the shaker with ice and shake vigorously for about 15 seconds until well-chilled.
Strain
Strain the mixture into a chilled cocktail glass.
Garnish
Garnish the cocktail with a piece of Calabrian chile and sprinkle a pinch of Tajin on top for an extra kick and flavor.
