Wash and clean the ripe red berries thoroughly. Remove any stems or leaves from the berries. Set aside in a bowl.

Prepare the Ingredients

Gently rinse the fresh violets under cold water. Add them to a separate bowl and set aside for later use.

Infuse the Violets

In a large pot, combine the washed ripe red berries and 1 liter of water. Bring to a gentle boil over medium heat. Once boiling, reduce the heat and let it simmer for 15 minutes.

After simmering, add the oak chips to the pot. Stir well and let it simmer for an additional 10 minutes to infuse the oak flavor into the mixture.

Remove the pot from heat and allow the mixture to cool slightly. Once cooled, add the smooth tannins (tannin powder) and stir until fully dissolved.

Incorporate Tannins

Add the fresh violets to the mixture, stirring gently to combine. Use a fine mesh strainer to strain the liquid into a clean fermentation vessel, removing the solids.

Seal the fermentation vessel with an airlock. Allow the mixture to ferment in a cool, dark place for about 2 to 4 weeks, depending on your desired flavor profile.

Fermentation Process

Once fermentation is complete, carefully siphon the wine into clean bottles, leaving some space at the top. Seal the bottles with corks.

Bottling

Store the bottles in a horizontal position in a cool, dark area for at least 6 months to allow the flavors to mellow and develop.
