Preparation

1. Chill the Glass

Begin by chilling an old-fashioned glass. Fill it with ice water and set it aside while you prepare the drink.

2. Prepare the Sugar

In a separate mixing glass, place the sugar cube. Add the two dashes of bitters directly onto the cube. Muddle these together until the sugar is mostly dissolved.

3. Add the Spirits

To the muddled sugar and bitters, add the rye whiskey and cognac. Fill the mixing glass with ice and stir the mixture well for about 20-30 seconds to chill and dilute the drink.

4. Prepare the Glass with Absinthe

Discard the ice water from the chilled old-fashioned glass. Add the absinthe and swirl it around the glass to coat the inside, then discard the excess absinthe.

5. Strain the Cocktail

Using a strainer, pour the rye and cognac mixture into the prepared glass.

6. Garnish

Express the oils from the lemon peel over the drink by holding it over the glass and gently twisting it. Optionally, add the peel as a garnish.
