Cake
Preheat the Oven
Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
Mix Dry Ingredients
In a large mixing bowl, sift together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
Combine Mixtures
Pour the wet ingredients into the dry ingredients and mix until just combined. Gradually stir in the boiling water until the batter is smooth.
Bake
Divide the batter evenly between the two prepared cake pans and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Cool
Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, turn them out onto wire racks to cool completely.
Chocolate Mousse
Melt Chocolate
Chop the dark chocolate into small pieces and melt it in a heatproof bowl over simmering water or in the microwave. Let it cool slightly.
Whip Cream
In a separate bowl, whip the heavy cream with the granulated sugar and vanilla extract until soft peaks form.
Combine Mixtures
Gently fold the melted chocolate into the whipped cream until just combined, then fold in the beaten egg whites carefully to maintain the fluffiness.
Chill
Transfer the mousse to a bowl or individual serving dishes and refrigerate for at least 2 hours until set.
Chocolate Fudge Icing
Melt Butter
In a saucepan, melt the unsalted butter over medium heat.
Combine Ingredients
Once melted, whisk in the cocoa powder and heavy cream until smooth. Remove from heat and stir in the vanilla extract.
Add Sugar
Gradually add in the powdered sugar, whisking until the icing is smooth and spreadable.
Assemble the Cake
Layer Cakes
Once the cakes are completely cooled, place one layer on a serving plate and spread a generous layer of chocolate mousse on top.
Add Second Layer
Place the second cake layer on top of the mousse and gently press down.
Frost the Cake
Spread the chocolate fudge icing over the top and sides of the cake, smoothing it out as desired.
Chill Before Serving
Refrigerate the cake for about 30 minutes to set the icing before serving.
