    Make vanilla yogurt

    In a medium bowl, combine the plain yogurt, vanilla bean paste (or scraped seeds), honey or maple syrup, and lemon zest. Whisk until smooth and slightly airy. Taste and adjust sweetness; set aside in refrigerator while preparing other components.

Granola

    Preheat oven

    Preheat the oven to 325°F (160°C). Line a baking sheet with parchment paper.

    Mix dry ingredients

    In a large bowl, stir together the rolled oats, slivered almonds, pumpkin seeds, shredded coconut, cinnamon, and salt until evenly combined.

    Add wet ingredients

    Pour the maple syrup and neutral oil over the oat mixture. Stir thoroughly so everything is lightly coated and clumps begin to form.

    Bake granola

    Spread the granola mixture in an even layer on the prepared baking sheet. Bake for 12 minutes, stir gently to turn the mixture, then bake another 8–12 minutes until golden and fragrant. Watch closely near the end to avoid burning.

    Cool and finish

    Remove from oven and let the granola cool completely on the baking sheet; it will crisp as it cools. Once cool, stir in the optional demerara sugar if using to add extra crunch.

Fruit & garnish

    Prepare fruit

    Gently rinse the berries and drain. Hull and quarter the strawberries. In a small bowl, toss the strawberries, blueberries, and raspberries with the lemon juice to brighten flavors and lightly macerate the fruit for 5–10 minutes.

    Assemble parfaits

    For four 8-oz (about 1 cup) parfaits: spoon a generous 2–3 tablespoons of granola into the bottom of each glass or jar. Add about 1/3 cup of the vanilla yogurt, then a layer of mixed berries (about 2–3 tablespoons). Repeat: 1/3 cup yogurt, 2 tablespoons granola, then top with remaining berries and a final dollop (about 2 tablespoons) of yogurt. Finish with a sprinkle (about 1 tablespoon) of granola on top and 2–3 mint leaves per parfait for garnish.

    Serve or store

    Serve immediately for crunchy granola. If making ahead, layer yogurt and fruit in jars and store refrigerated up to 6 hours; add granola just before serving to preserve crunch.
