Prepare brine
In a large pot, combine 8 cups water, 1/2 cup kosher salt, 1/4 cup brown sugar, 1 tablespoon whole black peppercorns, 2 bay leaves, 4 crushed garlic cloves and 3 thyme sprigs. Bring to a gentle simmer, stirring until salt and sugar dissolve. Remove from heat and cool to room temperature (about 20–30 minutes).
Cool and chill
Once the brine is room temperature, add 2 cups ice to speed cooling. Place the turkey legs in a nonreactive container or large zip-top bag and pour the cooled brine over them, ensuring they are fully submerged. Refrigerate for 4–8 hours (do not exceed 12 hours) to avoid over-salting.
Rinse and dry
After brining, remove turkey legs, discard brine, rinse each leg briefly under cold water, and pat dry thoroughly with paper towels. Let rest uncovered in the refrigerator for 30–60 minutes if time allows to dry the skin for better browning.

Make rub
In a small bowl combine 1 tablespoon paprika, 1 teaspoon brown sugar, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon ground black pepper and 1/4 teaspoon cayenne (optional). Stir to blend.
Oil and rub the legs
Rub each turkey leg all over with 1 tablespoon olive oil (total 2 tablespoons for both). Sprinkle and rub the spice mixture evenly over each leg, pressing gently so it adheres. Let sit at room temperature for 20 minutes if not brined; if brined and chilled, let them come close to room temperature for 20–30 minutes before cooking.
Cook (smoker or grill)
For a smoker or grill: place legs on the rack over indirect heat at 300–325°F (150–160°C). Smoke or grill indirectly for 60–90 minutes, turning occasionally, until an instant-read thermometer inserted into the thickest part (not touching bone) reaches 165°F (74°C). If you want deeper color, increase heat to 375°F (190°C) for the last 5–10 minutes, watching carefully.
Finish in oven (optional)
Alternatively, transfer legs to a baking sheet and finish in a preheated 325°F (160°C) oven for 45–75 minutes until internal temperature is 165°F (74°C). Cooking time varies by size; large legs can take up to 90 minutes total if starting from cold.
Rest
Remove legs from heat and tent loosely with foil. Let rest for 10–15 minutes to allow juices to redistribute before serving.
Glaze (optional)
Make glaze
While legs are finishing, melt 1 tablespoon butter in a small saucepan over low heat. Whisk in 2 tablespoons honey and 1 tablespoon apple cider vinegar until smooth and slightly warmed—do not boil.
Garnish and serve
Once rested, sprinkle 1 tablespoon chopped fresh parsley over the legs for color. Serve hot.
