Prepare ingredients

Trim and dry

Pat the bologna slices dry with paper towel. If the bologna is very wide compared to the bread, trim an inch off the edge so it fits the bread without overhang.

Set out bread slices. Mix the barbecue sauce and mustard in a small bowl (reserve a little extra BBQ for serving if you like). If using mayo, lightly spread on one side of each bread slice.

Pan-fry bologna

Heat pan

Place a 10-12 inch skillet over medium-high heat. Add the vegetable oil and heat until shimmering but not smoking (about 1–2 minutes).

Fry first side

Add the bologna slices in a single layer (work in batches if needed). Fry 2–3 minutes without moving until the edges crisp and the bottom browns.

Flip and sear

Flip each slice and fry the second side 1–2 minutes until lightly browned. Reduce heat to medium.

Press and crisp (optional)

For extra crispness, press each slice with a spatula or place a smaller pan on top for 30–45 seconds while cooking the second side.

Assemble & finish

Spread the BBQ-mustard mixture evenly on one side of two bread slices. Place a hot fried bologna slice on each sauced bread.

If using cheese, place a slice of American cheese on the hot bologna so it melts slightly (cover skillet briefly with a lid if you want it fully melted).

Top with optional pickle or tomato slices if using. Spread mustard (or mayo) on the remaining bread slices and close the sandwiches.

Toast sandwich (optional)

In the same skillet, add 1 tablespoon butter over medium heat. Place each assembled sandwich butter-side-down and toast 1–2 minutes per side until bread is golden and warmed through. Press gently with spatula while toasting.

Remove sandwiches, slice in half, and serve hot. Serve extra BBQ sauce on the side for dipping if desired.
