Prepare and mix

Fill a cocktail shaker or mixing glass with 1 cup of ice. Add 2 oz vodka, 0.75 oz fresh lemon juice, 0.5 oz simple syrup and 2 dashes Angostura bitters.

Shake

Secure the shaker and shake vigorously for 10–12 seconds until the outside of the shaker feels cold and frosty.

Add soda and strain

Open the shaker, add 2 oz cold club soda, then immediately double-strain the mixture into a 12 oz bottle or a glass filled with fresh ice to remove shards and bitters solids.

Garnish and chill

Float a lemon wheel in the bottle or on the glass. Cap the bottle if using one and chill in the refrigerator for at least 30 minutes before serving. Serve cold.

Batch (makes 6 bottles, 12 oz each)

Sterilize and prepare bottles

Wash 6 bottles and caps in hot, soapy water, rinse thoroughly, then place in a 250°F (120°C) oven for 10 minutes or pour boiling water through them. Let cool on a clean rack.

Mix base

In a large pitcher or sanitized container, combine 12 oz vodka, 4.5 oz fresh lemon juice and 3 oz simple syrup. Stir well to integrate.

Add bitters

Add 12 dashes of Angostura bitters to the base mixture and stir for 15–20 seconds to evenly distribute the bitters.

Chill and carbonate

Refrigerate the base mixture until well chilled (30–60 minutes). Just before bottling, gently fold in 12 oz cold club soda to preserve effervescence; do not vigorously stir to avoid flattening.

Bottle

Using a sanitized funnel, fill each 12 oz sterilized bottle, leaving ¾ inch headspace. Add a lemon wheel into each bottle if desired. Cap tightly.

Rest and serve

Place capped bottles in the refrigerator for at least 1 hour to marry flavors and to chill. Serve cold; consume within 3–5 days for best freshness. Gently invert once before opening to mix any settled bitters.
