Form patties

Divide the 1 lb ground beef into two equal portions (about 8 oz each). Gently shape each portion into a loose 6 oz–to–8 oz patty about 3/4" thick, making a slight indentation in the center of each patty with your thumb to prevent puffing during cooking. Avoid overworking the meat.

Season

Season both sides of each patty with kosher salt and freshly ground black pepper just before cooking.

Preheat grill or pan

Preheat a grill or heavy skillet (cast iron preferred) over medium-high heat. If using a pan, add 1 tablespoon vegetable oil and heat until shimmering.

Cook patties

Place patties on the hot grill or skillet. Cook without pressing for 3-4 minutes per side for medium (adjust time for desired doneness). For the last 1 minute of cooking, top each patty with 2 cheddar slices (total 4 slices) and close a lid or cover pan to melt cheese. Remove patties to a plate and tent with foil to rest for 3-5 minutes.

Cook bacon

While patties cook, place 4 bacon strips in a cold skillet and cook over medium heat until crisp, about 8-10 minutes, turning occasionally. Transfer bacon to a paper towel–lined plate to drain, then keep warm.

Sauté mushrooms

In the same skillet used for bacon (pour off excess fat leaving about 1 tablespoon, or wipe skillet and add 1 tablespoon butter), melt 1 tablespoon unsalted butter over medium heat. Add sliced mushrooms (if whole, halve or quarter to yield about 8 oz) and cook, stirring occasionally, until golden and liquid has evaporated, about 6-8 minutes. Add 1 teaspoon minced garlic during the last 30 seconds, stir to combine, then remove from heat. Season with a small pinch of salt and pepper to taste.

Buns & Assembly

Toast buns

Split the 2 burger buns and lightly brush cut sides with remaining melted butter from the pan or a little oil. Place cut sides down on the grill or skillet over medium heat until lightly toasted and golden, about 1-2 minutes.

Prepare spread

In a small bowl combine 2 tablespoons mayonnaise and 1 tablespoon yellow mustard. Spread on the bottom halves of the toasted buns.

Assemble burgers

Place each cheese-topped beef patty on the prepared bottom bun. Top each patty with two strips of crispy bacon and a generous portion of sautéed mushrooms. Add 4 pickle slices on top (or to taste). Finish with the bun tops and serve immediately.
