Prep

Bring all ingredients to room temperature for 10 minutes. If your bologna is a large round, cut into 4 evenly thick (about 1/4-1/2 inch) slices. Pat slices dry with a paper towel. Butter one side of each slice of bread evenly; set buttered sides aside to toast in the pan.

Season and sauce the bologna

Lay the bologna slices on a cutting board. Brush one side of each slice with about 1/2 teaspoon of BBQ sauce (total ~2 tablespoons across 4 slices) and lightly spread 1/4 teaspoon of yellow mustard on top of the BBQ on each slice. Sprinkle the BBQ/mustard side with a light dusting of coarse black pepper.

Heat the pan

Place a heavy skillet or cast-iron pan over medium heat. Add 1 teaspoon neutral oil and swirl to coat. Allow the pan to get hot for about 1 minute; it should shimmer but not smoke.

Fry the bologna

Place the bologna slices, sauced side up, into the hot skillet. Fry 2–3 minutes until the bottom edge just begins to brown. Flip each slice and continue frying 1–2 minutes more. Press gently with a spatula so the edges crisp slightly. If using thinner bologna, reduce time to avoid overcooking.

Melt the cheese

After flipping and when the second side is nearly done (about 30–45 seconds before removing), lay one slice of cheddar on top of two of the bologna slices so it starts to melt. If you prefer more melt, cover the pan briefly for 20–30 seconds to trap steam and encourage melting.

Toast the bread

While the cheese melts, place the buttered bread, butter-side down, in a separate clean skillet over medium-low heat or move bologna to a plate and use the same pan after lowering heat. Toast each slice 1–2 minutes until golden brown and crisp. If you like extra toasting, flip and toast the other side very briefly (be careful not to burn).

Assemble the sandwich

Place one toasted bread slice butter-side down on a board. Arrange two fried bologna slices topped with melted cheddar on the bread. Add optional dill pickle slices and a few drops of hot sauce if using. Top with the other toasted bread slice, butter-side up. Press gently to compress the sandwich.

Finish and serve

Slice the sandwich in half if desired. Serve hot. Estimated best eaten immediately while cheese is melty and bread is crisp.
