House Smoky Caesar Mix

Combine base ingredients

In a small bowl or jar, add 2 tbsp tomato paste, 1 tsp Worcestershire sauce, 1/2 tsp hot sauce, 1/2 tsp smoked paprika, 1/2 tsp prepared horseradish, 1/2 tsp soy sauce and 1/4 tsp cracked black pepper.

Adjust consistency

Stir in 2 tbsp water a little at a time until the mixture reaches a pourable, smooth consistency (should yield about 6 ounces total). Taste and adjust heat, smoke, or salt to preference.

Set the smoky Caesar mix aside or refrigerate until ready to build the cocktail. Keeps up to 5 days refrigerated in a sealed container.

Rim & Garnish

On a small plate, combine 1 tsp steak spice and 1 tsp coarse salt. Moisten the rim of a highball or Collins glass with the lime wedge, then dip the rim into the steak spice mixture, rotating to coat evenly. Fill the glass with ice.

Place the pickle spear on a cocktail pick or set it inside the glass for garnish.

In a mixing glass or shaker filled with ice, add 2 oz Smirnoff vodka, 4 oz Clamato juice, 1/2 oz pickle juice and 1 oz of the prepared house smoky Caesar mix.

Stir gently for about 10–15 seconds to chill and combine. Do not overly dilute; a gentle stir integrates the flavors while keeping texture.

Strain (or pour) the mixture into the prepared, rimmed glass over fresh ice.

Garnish with the pickle spear and a lime wedge. Serve with a stir stick or straw.
