Sauté aromatics and meat

Heat 1 tablespoon vegetable oil in a medium saucepan or skillet over medium heat. Add the finely diced onion, celery, and green bell pepper and sauté until softened, about 4 minutes. Add the ground pork (or beef) and break up with a spoon; cook until browned, 4–5 minutes. Add the minced garlic, smoked paprika, cayenne, salt, and black pepper and cook for 30–45 seconds until fragrant.

Add rice and liquid, simmer: Stir in the uncooked rice to coat with the aromatics and fat. Pour in 2 cups chicken broth (or water) and bring to a simmer. Reduce heat to low, cover, and cook until rice is tender and liquid is absorbed, about 15–18 minutes. Remove from heat and let sit, covered, 5 minutes, then fluff with a fork.

Beans & Corn

Warm and season beans & corn: In a small skillet over medium heat, combine the drained black beans and corn with 1/2 teaspoon ground cumin, 1/4 teaspoon chili powder, 1 tablespoon lime juice and 1/4 teaspoon salt. Cook, stirring occasionally, until warmed through, about 3–4 minutes. Remove from heat and taste; adjust salt or lime as needed.

Tequila Habanero BBQ Sauce

Prepare sauce: In a small blender or food processor combine 1/2 habanero (use less or more depending on heat tolerance), 1/4 cup ketchup, 1 tablespoon tequila, 1 tablespoon apple cider vinegar, 1 tablespoon brown sugar, 1 teaspoon soy sauce, 1/4 teaspoon smoked paprika, 1/4 teaspoon garlic powder and 1/8 teaspoon salt. Blend until smooth. Transfer to a small saucepan and simmer over low heat for 4–5 minutes to meld flavors and reduce slightly. Taste and adjust sweetness, acid or salt. Keep warm.

Habanero Cilantro Cream

Make the cream: In a small bowl or blender combine 1/2 cup sour cream (or Greek yogurt), 1/4 cup packed fresh cilantro, 1 teaspoon lime juice, a very small finely minced piece of habanero (about 1/8 of a pepper, optional for heat), and 1/8 teaspoon salt. Blend or whisk until smooth and bright green. Taste and add more lime or salt if desired. Chill briefly while other components finish.

Assembly & Finish

Warm bowls and assemble: Divide the dirty rice into two bowls (about 1/2 cup cooked rice per serving or more depending on preference — recipe yields roughly 2 generous bowls). Top each portion with half the warmed black beans and corn mixture.

Add toppings: Scatter diced tomato, shredded cheddar, and sliced jalapeños evenly over the bowls. Sprinkle the chopped cilantro.

Finish with sauces: Spoon the warm tequila-habanero BBQ sauce over each bowl (about 1–2 tablespoons per bowl, more to taste). Drizzle the habanero cilantro cream over the top (about 1 tablespoon per bowl) in a thin stream for contrast.

Serve: Serve immediately while warm. Provide extra lime wedges and hot sauce at the table if desired.
