Method

Prepare the Chips

Cut the Potatoes

Peel the Russet potatoes and cut them into thick chips (approximately 1/2 inch thick).

Soak the Chips

Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

Dry the Chips

Drain the soaked potatoes and pat them dry with a clean towel.

First Fry

In a large pot or deep fryer, heat 4 cups of oil to 325°F (160°C). Fry the chips in batches for about 5-6 minutes until they are soft but not browned. Remove and drain on paper towels.

Prepare the Fish

Make the Batter

In a mixing bowl, combine 1 cup of all-purpose flour, 1/4 cup cornstarch, 1 tsp baking powder, 1 tsp salt, and a pinch of black pepper. Gradually whisk in 1 cup of cold sparkling water until smooth.

Heat the Oil

In a large pot or deep fryer, heat 4 cups of oil to 350°F (175°C).

Batter the Fish

Dip each fish fillet into the batter, allowing excess batter to drip off.

Fry the Fish

Carefully place the battered fish fillets into the hot oil and fry for about 4-5 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

Final Fry for Chips

Second Fry

Increase the oil temperature to 375°F (190°C). Fry the pre-cooked chips in batches for an additional 3-4 minutes until golden brown and crispy. Remove and drain on paper towels. Season with salt to taste.

Serve the Dish

Serve the crispy fish alongside the chips. Offer malt vinegar, tartar sauce, and fresh lemon wedges on the side for dipping.
