Make the fruit infusion
Combine raspberries, cherries, sugar, water, and sliced ginger in a small saucepan. Bring to a gentle simmer over medium heat, stirring so the sugar dissolves. Reduce heat and simmer for 6–8 minutes until fruit softens and releases color and flavor.

Cool and strain
Remove the pan from heat and let the infusion cool for 10 minutes. Press the mixture through a fine-mesh sieve into a bowl or measuring cup, pressing solids to extract as much liquid as possible. Discard solids (or reserve for another use). You should have about 3/4–1 cup of concentrated red fruit infusion.

Combine liquids
In a large pitcher, pour chilled dry hard apple cider, fresh apple juice, cranberry juice, and fresh lemon juice. Stir gently to combine.

Add infusion
Stir the cooled Red Cap infusion into the cider mixture. Taste and adjust sweetness or tartness: add up to 1 tablespoon extra sugar dissolved in warm water if you prefer sweeter, or add another teaspoon of lemon juice for more brightness.

Chill
Refrigerate the mixed cider for at least 30 minutes to let flavors marry. If serving immediately, add chilled ice to individual glasses rather than the pitcher to avoid diluting the batch.

Serve
If using, stir in up to 1 cup chilled sparkling water just before serving for a spritzed finish (optional). Fill glasses with ice if desired. Pour cider into glasses.

Garnish each glass with an apple slice, a lime slice, and 2 mint leaves. Drop a few reserved raspberries or a cherry into each glass for visual appeal and extra fruit flavor.
