    Prep

    If using egg white, separate one egg and measure 0.5 oz (about half an egg white). Chill your coupe or Nick & Nora glass in the freezer for a few minutes.

    Add vodka (2 oz), fresh lemon juice (0.75 oz), maraschino liqueur (0.5 oz), Rainier cherry syrup or cherry juice (0.5 oz), simple syrup (0.25 oz), and egg white (0.5 oz, optional) to a cocktail shaker.

    Dry shake (no ice) vigorously for 15–20 seconds to emulsify the egg white and produce a silky foam (skip dry shake if not using egg white).

    Add 4 ice cubes to the shaker and shake again hard for 10–15 seconds until the shaker is well chilled and slightly frosted.

    Double strain the cocktail into the chilled coupe or Nick & Nora glass using a fine mesh strainer to remove ice shards and any solids.

    If you prefer a lighter finish, top with 1 oz club soda and give a gentle stir to integrate (optional).

    Thread the Rainier cherry onto a pick or place it in the glass and express a lemon twist over the surface to release oils, then drop the twist into the drink.
