Brew espresso
Brew two shots (about 60 ml) of espresso using an espresso machine. If you don't have an espresso machine, brew 60 ml of very strong coffee (use finely ground coffee with a 1:6 coffee-to-water ratio). If using instant espresso, dissolve the powder in 30 ml hot water to make concentrated espresso.

Make chocolate syrup
In a small heatproof cup or bowl, combine 1.5 tablespoons unsweetened cocoa powder and 1.5 tablespoons granulated sugar. Add 30 ml hot water and whisk vigorously until the mixture is a smooth, pourable chocolate syrup with no lumps (about 20–30 seconds). If needed, warm briefly in the microwave (10–15 seconds) and whisk again.

Steam or heat milk
Pour 10 oz milk into a steaming pitcher or small saucepan. Add 1/4 tsp vanilla extract. Steam with a steam wand until milk reaches about 60–65°C (140–150°F) and has a velvety microfoam. If you don't have a steam wand, heat milk on the stove over medium heat until it begins to steam (do not boil), about 3–4 minutes, then froth with a handheld milk frother or whisk vigorously to create foam.

Combine milk and chocolate
Pour the prepared chocolate syrup into your serving cup. Add the brewed espresso. Stir briefly to combine. Slowly pour the steamed milk into the cup, holding back foam with a spoon; then spoon the remaining foam on top.

Garnish and serve
Top the mocha with 2 tablespoons whipped cream if desired, and sprinkle 1 teaspoon chocolate shavings or a dusting of cocoa powder over the top. Serve immediately.
