Cured Meats

Method

Cured Meats

  1. 1

    Arrange cured meats

Fold or roll slices of prosciutto, soppressata, and coppa into loose rosettes or gentle piles. Place them in separate clusters around the board so guests can access each type without crowding. Aim for visual variety by alternating shapes and orientations.

Cheeses

  1. 2

    Prepare cheeses

Bring cheeses to room temperature 30–45 minutes before serving for best flavor. Place the brie wheel whole toward the center or edge; score the top lightly and drizzle 1 tsp olive oil and a small crack of black pepper over it. Place the goat cheese log on a small dish or directly on the board and optionally run a fork across the top for texture. Fan slices of manchego and chunk or leave a wedge of aged cheddar with a cheese knife for easy cutting.

Pickled & Marinated

  1. 3

    Prepare pickles and olives

Drain olives and place them in a small bowl to contain brine. Spoon quick-pickled vegetables and cornichons into separate small bowls or piles. Tuck the bowls or piles into gaps between cheeses and meats to create contrast in color and flavor.

Fruits & Preserves

  1. 4

    Arrange fruits and jam

Cluster dried apricots and figs in small piles near softer cheeses (goat cheese and brie). Leave fresh grapes or berries on the stem or as a small bunch to provide freshness. Spoon fig jam into a small ramekin and place next to the cheese that pairs well (brie or cheddar).

Spreadables & Extras

  1. 5

    Place spreads and nuts

Place whole grain mustard and honey in small dishes or squeeze jars and set them near breads and cheeses. Scatter roasted nuts and Marcona almonds in small piles around the board or in tiny bowls. Ensure every spread has a small spoon or knife for serving.

Bread & Crackers

  1. 6

    Arrange bread and crackers

Slice the baguette on the diagonal into 1/2-inch slices and arrange in a fan or stacked pile. Place assorted crackers in a separate section of the board, keeping them away from moist items to prevent sogginess. Provide a small cutting knife for the baguette and cheese knives for each cheese type.

Garnish & Finishing

  1. 7

    Finish the board

Fill any remaining gaps with sprigs of rosemary, scattered microgreens or thyme, and a few extra nuts or fruit pieces for color. Check for balance of colors, textures, and flow: move items so guests can easily reach each cluster. Offer small plates, napkins, and cocktail picks on the side.

Serving

  1. 8

Serve immediately at room temperature. Replenish items as needed. Leftovers: wrap cheeses separately and store cured meats in airtight container; consume within 2–3 days for best quality.
