Preparation

Chill and Prepare Bottle

1. Chill the bottle

Place the Pierre Morin Sancerre in an ice bucket filled halfway with ice and cold water for 15–20 minutes, or chill in the refrigerator for at least 2 hours so it reaches 8–10°C (46–50°F). If short on time, wrap the bottle in a wet towel and freeze for 20–25 minutes.

2. Keep the ice bucket nearby to maintain temperature while serving; add a few fresh ice cubes as needed.

Prepare Glassware

3. Select clean white wine or tulip glasses. Rinse with cold water and let air-dry or dry with a lint-free cloth to remove any dust or odors that could interfere with the wine's aromatics.

4. If you prefer a slightly more open aromatics profile, decant the bottle briefly into a small carafe for 5–10 minutes to allow the wine to breathe. This is optional; Sancerre generally benefits from being served relatively young and fresh.

Open and Pour

5. Use a corkscrew to gently remove the cork. Wipe the bottle lip with a clean cloth or napkin to remove any sediment or cork fragments.

6. Pour a modest tasting pour (about 2–3 oz / 60–90 ml) for the host or first taster to evaluate temperature and aroma. Then pour roughly 5–6 oz (150–180 ml) per glass for guests, filling glasses to about one-third to allow room for swirling and aroma concentration.

Serve with Optional Pairings

7. Place soft goat cheese on a small board; drizzle with a little olive oil if desired and sprinkle with the chopped herbs. Offer crackers or baguette slices alongside.

8. If using lemon, provide a single thin slice per glass so guests may smell or optionally rub the rim lightly for a bright citrus accent. Do not squeeze lemon into the wine—this will unbalance it.

9. Recommend pairing suggestions to guests: oysters, shellfish, grilled white fish, goat cheese, light salads with vinaigrette, or vegetable-focused dishes. Pierre Morin Sancerre's high acidity and citrus/green notes complement seafood and fresh cheeses particularly well.

Storage and Leftovers

10. If the bottle is not finished, re-cork or use a reusable wine stopper and refrigerate upright. Consume within 2–4 days for best aromatics and freshness. Keeping the bottle chilled in the fridge helps preserve the wine's acidity and aromatics.
