    Make blueberry-ginger purée

    In a blender or food processor combine the organic blueberries and grated fresh ginger. Add the fresh lime juice and ube syrup. Blend at high speed until a smooth, vivid purple purée forms (20–30 seconds). If mixture is very thick, add 1/2 oz water and pulse once or twice to help blend.

    Double-strain purée

    Place a fine-mesh sieve or chinois over a bowl. Pour the purée through the sieve, pressing with the back of a spoon to extract juices and leave solids behind. For an extra silky texture, strain a second time through a finer sieve or cheesecloth. You should have roughly 1.5–2 oz of strained purée/juice.

    Combine with spirit

    In a cocktail shaker add the strained blueberry-ube-ginger juice, 2 oz aplos calme, and crushed ice (about 1 cup).

Foam

    Dry shake with aquafaba

    Add 0.75 oz aquafaba and 0.5 oz simple syrup to the shaker with the spirit and purée. Do a dry shake (no ice) vigorously for 20–30 seconds to build a stable foamy emulsion.

    Wet shake to chill

    Open the shaker, add ice (if not already added) and shake vigorously for another 10–15 seconds to chill and further aerate. The aquafaba will create a silky foam head when strained.

Assembly & Finish

    Prepare a chilled coupe or rocks glass. Fine-strain the cocktail into the glass so the foam and liquid are smooth and free of solids.

    Top gently with 2 oz chilled ginger beer poured slowly down the side to preserve the foam. The ginger beer adds effervescence and a spicy ginger lift.

    Garnish: Thread 4–6 whole blueberries onto a cocktail pick and rest across the rim or float in the foam. Add a lime wheel or twist for aroma. Optionally grate a little fresh ginger on top of the foam for extra scent (use sparingly).

    Serve immediately. Advise the drinker to break the foam with the first sip to experience the layered texture: airy ube-blueberry foam, then vibrant blueberry-ginger liquid, finished by the bright ginger beer fizz.
