Method

Cashew Milk (housemade)

    Soak or quick-boil cashews

    If you have time, soak raw cashews in water at room temperature for at least 4 hours or overnight. For quick method, place cashews in a pot, cover with water, bring to a gentle boil and simmer 10–15 minutes. Drain and rinse.

    Blend cashew milk

    Combine the drained cashews and 3 cups fresh water in a high-speed blender. Add 1 tsp maple syrup (optional) and a pinch of fine sea salt. Blend on high for 60–90 seconds, until completely smooth and slightly frothy. Taste and adjust sweetness. Strain through a fine mesh or nut milk bag only if you prefer an ultra-silky milk (optional). Chill if making iced latte.

Strawberry Purée

    Place the chopped strawberries, 1 tsp maple syrup and 1 tsp lemon juice in a small blender or food processor. Pulse until smooth but still slightly textured (or fully smooth if preferred). Taste and add a little more maple if you want it sweeter. If you want a thinner syrup-like consistency, stir in 1–2 tsp water.

    If you prefer a seed-free purée, press the mixture through a fine mesh sieve with the back of a spoon into a small bowl, discarding seeds.

Matcha

    Sift 2 tsp ceremonial matcha powder into a small bowl to remove lumps.

    Add 60 ml of hot water (about 80°C / 175°F) — not boiling — and 1 tsp maple syrup for sweetness. Whisk vigorously in a zig-zag (W) motion with a bamboo whisk (chasen) or use a small milk frother/hand whisk until the matcha is bright green, foamy, and smooth, about 20–30 seconds.

Assembly & Serve

    For iced latte: add 1 cup ice to a large glass. Spoon 2–3 tbsp (or to taste) strawberry purée into the bottom of the glass. Pour 150–180 ml chilled cashew milk over the purée. Slowly pour the prepared matcha over the top to create a layered effect. Stir gently before drinking to combine flavors.

    For hot latte: warm 150–180 ml cashew milk gently on the stove or in a milk frother to 60–65°C (do not boil). Froth if desired. Spoon 1–2 tbsp strawberry purée into the cup, add the hot cashew milk, then pour the whisked matcha on top. Stir to incorporate the strawberry.

    Garnish with 2 fresh strawberry slices and a light dusting (about 1/4 tsp) of matcha powder. Adjust sweetness with additional maple syrup if needed.
