    Peel and thinly slice the fresh turmeric and ginger. If using dried/ground turmeric, measure 2 tablespoons (packed) instead. Lightly bruise the lemongrass stalks with the back of a knife to release oils.

    Simmer

    Combine 4 cups water, sliced turmeric (or ground), sliced ginger, and bruised lemongrass in a small saucepan. Bring to a gentle boil over medium-high heat.

    Reduce and steep

    Lower heat to maintain a low simmer, add 1 teaspoon freshly ground black pepper, and simmer uncovered for 10 minutes. For a stronger infusion, simmer up to 15 minutes.

    Strain and sweeten

    Remove the pan from heat and strain the tea through a fine-mesh sieve into a heatproof pitcher or directly into cups to remove turmeric, ginger, and lemongrass solids.

    Stir in 2 teaspoons honey or maple syrup while the tea is hot so it dissolves evenly. Add 2 teaspoons freshly squeezed lemon juice and taste; adjust lemon and sweetener to preference.

    If using fresh mint, bruise the leaves slightly and add them to the strained tea; allow to steep 2–3 minutes for a subtle mint note, then remove the leaves.

Creamy Finish (optional)

    For a creamier, golden‑milk style tea, whisk in 1 tablespoon coconut milk (or milk of choice) into each cup or into the pitcher. Warm gently if needed, but do not boil once milk is added to preserve texture.
