    Bring steak to room temperature

    Remove the Wagyu steak from the refrigerator 30–45 minutes before cooking so it comes closer to room temperature. Pat both sides dry with paper towels—dry surface ensures better sear.

    Season

    Season both sides generously with the kosher salt and freshly ground black pepper. For a thick steak (1–1.5 in), season a little more on the sides as well.

    Preheat pan

    Heat a heavy cast-iron skillet or stainless steel pan over medium-high heat for 4–6 minutes until very hot but not smoking. Add the neutral oil and swirl to coat the pan.

    Sear the steak

    Place the steak in the hot pan and let it sear undisturbed until a deep brown crust forms, about 2.5–3.5 minutes for a 1-inch steak (adjust 3.5–4.5 minutes for 1.25–1.5 in). Flip and sear the other side for the same time. Use tongs and avoid pressing the steak.

    Finish with butter and aromatics

    Reduce heat to medium. Add the 2 tbs butter, crushed garlic cloves, and herb sprigs to the pan. Tilt the pan slightly and spoon the melted butter over the steak repeatedly (baste) for 1–2 minutes to enhance flavor and finish cooking. For medium-rare aim for an internal temperature of 125–130°F (52–54°C); for medium 135°F (57°C).

    Rest

    Transfer the steak to a cutting board and tent loosely with foil. Rest for 6–10 minutes so juices redistribute. Resting time depends on steak thickness; thicker needs longer.

    Slice

    After resting, slice the steak against the grain into 1/4-inch slices. Reserve juices on the cutting board to spoon over when plating.

Eggs & garnish

    Prepare pan

    While the steak rests (or immediately after transferring it to the cutting board), wipe a small nonstick skillet clean or use the same cast-iron if desired (use lower heat). Heat the pan over medium-low and add 1 tbs unsalted butter or oil until foam subsides.

    Cook eggs (sunny-side or over-easy)

    Crack 2 eggs into a small bowl, then gently slide into the pan. For sunny-side, cook slowly until whites are set but yolks remain runny, about 3–4 minutes. For over-easy, cook until whites are set (~2–3 minutes), gently flip and cook 15–30 seconds more. Season eggs with 1/4 tsp kosher salt and a pinch of black pepper while cooking.

    Plate and garnish

    Arrange sliced Wagyu on warmed plates, spoon any resting juices over the meat, and place the eggs alongside or on top of the steak slices. Sprinkle chopped parsley over eggs and steak if using. Serve immediately.
