Method
Prepare Mushroom Coffee Blend

Measure powders
Measure the instant coffee (or finely ground espresso if using an Aeropress or moka), lion's mane powder, chaga powder, and reishi powder into a small bowl or directly into your mug. Stir the dry ingredients together until evenly combined so the mushroom powders distribute through the coffee.

Heat water
Bring 240 ml water to a simmer and then remove from heat so it's just off the boil (about 95°C / 203°F). Using water slightly below a full boil preserves delicate mushroom compounds and avoids scorching flavors.

Bloom and dissolve
Pour about 30–60 ml of the hot water over the coffee-mushroom mixture to 'bloom' and dissolve. Stir briskly for 15–20 seconds with a spoon or small whisk to break up any clumps and ensure the powders dissolve as much as possible.

Combine liquids
Add the remaining hot water (and milk if using) to the mug. If you want a richer, creamier texture, add the unsalted butter or coconut oil now.

Emulsify
If using butter or oil, blend the beverage for 10–20 seconds with an immersion blender or transfer to a blender and blend briefly until frothy and emulsified. If not using oil, whisk vigorously or use a small frother until the surface is slightly frothy.

Season and sweeten
Stir in maple syrup or honey, vanilla extract, ground cinnamon, and a pinch of fine sea salt to taste. Taste and adjust sweetness or spice as desired.

Optional strain
If you used coarser mushroom preparations or ground coffee and have a gritty texture, strain the drink through a fine mesh strainer into your serving cup.

Serve immediately while warm. For an iced version, let the drink cool slightly, pour over ice in a tall glass, and adjust milk and sweetener to taste.
