    Chill glass

    Place a highball or wine glass in the refrigerator or fill with ice to chill it for 2–3 minutes while you prep other ingredients.

    Pour 1 cup (about 240 ml) of chilled non-alcoholic sparkling wine or sparkling grape juice into a measuring cup. Add 3 oz (about 90 ml) of club soda or chilled sparkling water. Stir gently once with a bar spoon to combine — do not disturb the bubbles too much.

Apero & Citrus

    Add 2 tablespoons of the non-alcoholic aperitif to a small mixing glass. If your aperitif is syrupy, measure carefully so sweetness stays balanced.

    Squeeze 1.5 oz (about 45 ml) fresh orange juice (approximately one small orange) and add it to the mixing glass. Add 2 dashes of orange bitters (or non-alcoholic equivalent).

    Stir the aperitif, orange juice, and bitters together with a spoon for about 10 seconds to marry flavors.

Sweetener (optional)

    Taste the combined aperitif and citrus. If you prefer slightly sweeter, add 1 tsp simple syrup or agave and stir to dissolve. This step is optional — many apero-style drinks are pleasantly bitter and only need a touch of sweetness.

Assembly & Garnish

    Discard ice from the chilled glass if you used it to chill. Add fresh large ice cubes (about 1 cup volume) to the glass.

    Strain the aperitif/citrus mixture over the ice in the glass.

    Slowly top with the sparkling base (the non-alcoholic sparkling wine + club soda mixture). Pour gently down the side or over the back of a spoon to preserve effervescence.

    Give the drink one gentle stir (1–2 rotations) to integrate layers while keeping bubbles.

    Garnish with an orange wheel or a twisted orange peel. Optionally add a sprig of thyme or rosemary for an aromatic note; slap the herb lightly to release oils before placing it in the drink.

    Serve immediately while sparkling. Advise guests to sip slowly to appreciate the bitter-sweet apero and bright citrus.
