Crispy Macha (Fish) Fingerlings

Prepare the fish
Pat the fish fillets dry with paper towels. Cut the fillets into 3–4 inch finger-sized strips (about 12–16 pieces from 1 lb depending on fish thickness). Season lightly on both sides with 1 tsp kosher salt and 1 tsp black pepper.

Marinate with ginger & turmeric
In a bowl combine 1 tablespoon grated ginger, 1 teaspoon grated (or ground) turmeric, 1 tablespoon minced garlic, 2 tablespoons lime juice and 1 tablespoon soy sauce. Toss the fish strips gently to coat. Let sit 10–15 minutes (no more than 30) to pick up flavor.

Set up dredging station
Place the flour and cornstarch mixed together in a shallow dish. In a second shallow bowl beat 1 egg (or use aquafaba) with a pinch of salt. In a third dish combine panko breadcrumbs and, if using, 1/2 cup finely shredded unsweetened coconut and 1 tablespoon coconut flour. Season the panko mixture with a pinch of salt and pepper.

Dredge the fingerlings
One by one, lightly shake excess marinade from the fish pieces, dredge in the flour-cornstarch mixture, dip into the beaten egg, then press into the panko (with or without coconut) until well coated. Place on a wire rack while you heat the oil. Repeat until all pieces are coated.

Heat oil
Pour about 1 cup neutral oil into a large heavy skillet (cast-iron or stainless) to a depth of roughly 1/4–1/2 inch. Heat over medium-high until shimmering and a small breadcrumb dropped in sizzles immediately (about 350–360°F / 175–180°C). If you have a thermometer use it; otherwise test with a small piece of the panko mixture.

Fry the fingerlings
Fry the coated fish in batches (do not crowd) for 2–3 minutes per side, until golden brown and the fish registers 130–140°F (54–60°C) depending on thickness and flakes easily. Adjust heat as necessary to keep oil at a steady sizzle without burning breadcrumbs. Remove to a paper towel–lined tray or wire rack.

Finish and garnish
When all batches are cooked, transfer fingerlings to a serving platter. Sprinkle with chopped cilantro and sliced scallions. Serve immediately with lime wedges alongside the dipping sauce.
Ginger & Turmeric Coconut Curry Dipping Sauce

Make the sauce base: In a small saucepan over medium heat add 1 cup coconut milk and 1 tablespoon curry paste. Whisk to combine and bring to a gentle simmer (do not boil).

Add aromatics: Stir in 1 tablespoon grated ginger, 1 teaspoon grated or ground turmeric, and 1 teaspoon minced garlic. Simmer gently for 2–3 minutes until fragrant.

Season and balance: Whisk in 1 teaspoon fish sauce (or soy sauce), 1 tablespoon lime juice, and 1 teaspoon brown or palm sugar. Taste and adjust salt with 1/4 teaspoon salt or more to preference. If sauce is too thick, thin with 1–2 tablespoons water to reach a dipping consistency.

Finish and serve: Remove from heat and stir in 1 tablespoon chopped cilantro (optional) and crushed red pepper flakes or sliced chilies to taste. Transfer to a small bowl for serving alongside the fingerlings.
Optional Notes (Coconut Curry Variation)

For a more coconut-forward bite, include the shredded coconut in the panko mix (as noted) for extra texture and flavor. You can also fold 1 teaspoon curry paste into the beaten egg to lightly flavor the crust before frying.
