    Toast and bruise spices

    Lightly crush cardamom pods, cloves, and peppercorns with the flat of a knife or mortar and pestle. Briefly toast the crushed spices and the cinnamon stick in a dry saucepan over medium heat for 30–45 seconds until fragrant (watch carefully to avoid burning).

    Simmer concentrate

    Add 2 cups water, sliced ginger, star anise (if using), and the toasted spices to the saucepan. Bring to a gentle boil over medium-high heat, then reduce heat to low and simmer, uncovered, for 8–10 minutes so flavors infuse.

    Brew tea and sweeten

    Remove from heat and add the 3 black tea bags and the sugar. Stir to dissolve sugar. Let steep for 4–5 minutes (longer for stronger flavor). Taste and add vanilla extract if using.

    Strain concentrate

    Strain the mixture through a fine-mesh sieve or cheesecloth into a heatproof container, pressing on solids to extract liquid. Discard solids. The result is approximately 2 cups of chai concentrate. Keep warm or refrigerate for up to 3–4 days.

Milk and Serving

    Heat and froth milk

    For each serving (makes about 2 lattes): pour 2 cups milk into a small saucepan and warm over medium heat until steaming but not boiling (about 3–5 minutes). If you have a milk frother, froth the warmed milk until light and foamy. Alternatively, whisk vigorously by hand or shake in a lidded jar for 30–60 seconds.

    Combine and sweeten

    To make two 1-cup chai lattes: in two heatproof cups, divide the chai concentrate evenly (about 1/2 cup concentrate per cup) and top each with 3/4 cup warmed milk (adjust concentrate-to-milk ratio to taste). If additional sweetening is desired, stir in up to 1 tsp sweetener per cup.

    Finish and garnish

    Spoon any remaining foam over the lattes and dust each with a pinch of ground cinnamon. Serve immediately.
