Prepare bread
Preheat a skillet over medium heat. If using a sub roll, slice it open lengthwise but not all the way through if you prefer a sandwich-style presentation, or cut into thick slices for toasts.

Soften and combine butters
Ensure both the vegan compound butter and the grass-fed butter are at room temperature so they are easily spreadable. In a medium bowl, add the vo compound vegan butter (6 tbs) and "It's All Good" grass-fed butter (4 tbs).

Add seasonings
To the butter mixture add 1 tsp sea salt, 1/2 tsp freshly ground black pepper, 2 tbs finely chopped fresh parsley, 1 tbs lemon zest, and the optional very finely minced garlic. Use a fork or small spatula to mash and combine thoroughly until smooth and uniformly mixed, about 1–2 minutes.

Adjust consistency and flavor
Taste a small amount and adjust seasoning as needed — add up to 1/2 tsp more salt or a few drops of lemon juice if you want brighter acidity. If the butter seems too soft, chill it briefly (5–10 minutes) to firm; if too firm, let stand at room temperature 5–10 minutes.

Finish
Sprinkle a small pinch of flaky finishing salt (about 1/8–1/4 tsp per piece) over the buttered bread if desired. Add microgreens or a few salad leaves as garnish.
