Boil the Linguine

In a large pot, bring salted water to a boil. Add linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the linguine.

Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Then add diced zucchini and bell pepper, cooking for about 4-5 minutes until slightly softened.

Add Tomatoes and Spinach

Stir in the halved cherry tomatoes and cook for another 2 minutes. Add the fresh spinach and cook until just wilted.

Combine Pasta and Sauce

Add the drained linguine to the skillet with vegetables. Toss to combine, adding reserved pasta water a little at a time until the desired consistency is reached.

Season and Serve

Stir in grated Parmesan cheese, salt, and black pepper. Adjust seasoning to taste. Serve hot, garnished with fresh basil leaves.
