Sweet aromas of pears, melon, and tropical fruits are accented with a pleasant floral note. It's light-to-medium bodied and round in texture.

Chill the Pinot Grigio and sparkling water in the refrigerator for at least 1 hour so the drink is well chilled before assembly.

Prepare fruit: peel and thinly slice the pear; dice honeydew melon and tropical mix (pineapple and mango) into small, uniform pieces. Pat fruit dry with a paper towel to remove excess juice.

If making simple syrup fresh: combine equal parts sugar and water in a small saucepan, heat gently until sugar dissolves, then cool. Use 1 tablespoon for this recipe.

In a small pitcher or mixing vessel, combine 1.5 cups chilled Pinot Grigio with 1 tablespoon light simple syrup and 1 teaspoon fresh lemon juice. Stir gently to incorporate.

Add the prepared fruit (1/4 cup pear slices, 1/4 cup diced honeydew, 1/4 cup diced tropical mix) to the wine mixture. Let the fruit macerate in the wine for 2–3 minutes to release aroma and a touch of fruit juice.

Taste the mixture. If you prefer a lighter, more effervescent drink, add up to 1/4 cup additional chilled sparkling water. For this recipe, stir in 1/2 cup chilled sparkling water to give a round, light texture and gentle bubbles.

Very gently fold in the edible floral petals (1 teaspoon) if using, to add the floral note without overpowering the wine's aromatics.

Fill a wine glass with 3–4 ice cubes. Place one thin pear slice against the inside of the glass for presentation.

Strain the wine-fruit mixture into the prepared glass, allowing fruit pieces to fall in as desired (you may use a fine mesh strainer if you prefer no fruit solids).

Garnish with a small mint sprig or an edible flower on the rim or floated on top.

Serve immediately while chilled and slightly effervescent. Gently stir once at the table if desired.
