Hints of sweet apricot and pear aromas give way to luscious fruit and spice flavors on the palate followed by a crisp clean finish.

Pour 1 cup of chilled Riesling into a mixing glass or small pitcher. Choose an off-dry Riesling if you want the wine to read a touch sweeter; a drier style will emphasize crispness.

Measure wine

If using dried apricot, roughly chop into small pieces. If using fresh apricot, pit and dice. Thinly slice half a ripe pear and two thin lemon slices. Add the apricot, pear slices, and lemon slices to the Riesling in the pitcher.

Prepare fruit

Let the fruit steep in the wine for 5–10 minutes at room temperature to release aroma and flavor without losing the wine's brightness.

Macerate briefly

Stir in 1 teaspoon of honey or simple syrup to introduce a subtle sweet apricot note. Lightly crush 2 cardamom pods and add along with 3 allspice berries to impart warm spice notes. Stir gently to combine.

Add sweetener and spice

Taste the mixture after 2–3 minutes of infusion. If you prefer more apricot/pear sweetness, add up to another 1/2 teaspoon of honey or syrup. If the spice is too strong, remove the cardamom/allspice after 5 minutes of steeping.

Add 4 ice cubes to a serving glass. Strain the wine mixture into the glass, leaving behind larger fruit pieces and whole spices for a clean presentation. If you prefer a lighter, fizzy finish, top with 2 oz sparkling water.

Chill and strain

Garnish with a thin fresh apricot or pear slice on the rim. Serve immediately so the drink remains crisp and aromatic.
