Remove the Robert Mondavi Private Selection Cabernet Sauvignon from refrigeration (if chilled) and allow it to sit at cool room temperature for 15–30 minutes so it reaches approximately 60–65°F (15–18°C). This temperature highlights its black cherry, blackberry, vanilla and toasty oak aromas without muting acidity.

Bring to ideal temperature

Select large-bowled red wine glasses. Ensure glasses are clean and free of strong odors. If using two glasses, set them out so each guest has ample bowl space to swirl the wine.

Prepare glassware

Cut the foil below the lip or remove capsule, wipe the top of the cork with a clean cloth, and insert a corkscrew straight into the cork. Gently pull the cork out with steady upward pressure to avoid cork breakage.

Open the bottle

Hold the bottle up to light and look for sediment (unlikely in a filtered, commercial bottle but possible in older bottles). If desired, pour the wine slowly into a decanter in one steady stream and stop when you see the first signs of any sediment reaching the bottle neck. Decanting for 20–60 minutes can open the wine’s aromas—especially the toasty oak and coffee notes.

Inspect and decant (optional)

Pour about 4–6 oz (120–180 ml) per glass, filling to the widest part of the bowl to allow aroma development. Avoid overfilling to allow room for swirling.

Pour

Hold the glass at the stem and tilt it to inspect color depth and rim variation. Note the deep ruby to garnet hue typical of Cabernet Sauvignon.

Observe

Swirl the glass gently to aerate the wine and release aromas. Inhale gently to appreciate black cherry, blackberry, vanilla, toasty oak, and coffee notes described on the bottle.

Aromas

Take a small sip, allow the wine to coat your palate, and note structure: dark fruit flavors (black cherry, blackberry), mid-palate vanilla, toasty oak and subtle coffee finish. Evaluate acidity, tannin, and finish.

Taste

Enjoy with a cheese board featuring aged cheddar or gouda, or small pieces of dark chocolate. Fresh blackberries or cherries can be eaten between sips to refresh the palate and accentuate fruit notes.

Pairing suggestions

If you don't finish the bottle, reseal with the original cork or a wine stopper and store upright in the refrigerator. The wine will generally keep acceptably for 3–5 days; allow it to warm back to serving temperature before drinking.
