Chill the bottle to 55-60°F (13-16°C). If the bottle is at room temperature, place it in the refrigerator for 20–30 minutes or in an ice bucket with a 2:1 mixture of ice and water for 10–15 minutes. Avoid over-chilling which can mute the wine's aromatics and fruit.

Chill to serving temperature

Check the label and bottle for any damage. If the bottle has sediment or appears to have been stored on its side for a long time, plan to decant.

Inspect the bottle

Use a foil cutter or the knife on the corkscrew to remove the capsule cleanly, exposing the cork.

Cut and remove foil

Use a corkscrew to remove the cork gently. Place the removed cork in a small bowl or on a clean surface to avoid mess. Smell the cork briefly to ensure there is no obvious musty or corked aroma.

Open the bottle

For best expression of ripe plum and cherry aromas and to soften tannins, pour the wine slowly into a clean decanter. If the wine is young and tannic, decant for 30–60 minutes. If the wine is older (10+ years) or shows sediment, decant carefully and stop once you see sediment approaching the neck. If you prefer not to decant, allow the opened bottle to rest upright for 15–30 minutes before serving.

Use large-bowled red wine glasses to concentrate aromas of plum, cherries, and sweet tannins.

Select appropriate glassware

Pour about 4–6 ounces (120–180 ml) per glass, filling only to the widest part of the bowl to allow swirling and aroma release.

Pour the wine

Swirl the wine gently in the glass to release aromatics, then inhale deeply to appreciate ripe plum, cherry, and subtle oak or spice notes.

Swirl and smell

Take a small sip, letting the wine coat your palate. Note the wine's smooth, sweet tannins, balanced acidity, and long persistent finish. Pair with grilled red meats, roasted vegetables, hard cheeses, or charcuterie as desired.

Taste and enjoy

Re-cork the bottle with the original cork or a wine stopper and store upright in a cool place or refrigerator. Consume any remaining wine within 3–5 days for best quality. If decanted, transfer leftovers back to the bottle and refrigerate to limit oxygen exposure.
