OLD FASHIONED

This Rosé has an elegant aromatic nose of watermelon and strawberries. It has a crisp, fresh palate and the finish is deliciously long and fruity.

Chill a large pitcher in the fridge for 10–15 minutes so the rosé and fruit stay cold when combined.

Fill the chilled pitcher about halfway with ice cubes (approximately 2 cups) to keep the sangria bright and refreshing; reserve remaining ice for serving.

Place the diced watermelon (2 cups) and halved strawberries (1 cup) in a blender. Add the fresh lemon juice (60 ml) and simple syrup (45 ml). Pulse until mostly smooth but still slightly textured, about 15–20 seconds. Taste and add up to 15 ml more simple syrup if you prefer sweeter.

Prepare Fruit Purée

Pour the puréed fruit through a fine-mesh sieve into the chilled pitcher to remove seeds and large pulp (press gently with a spoon to extract juices). Discard solids left in the sieve. Add the full bottle of chilled rosé (750 ml) to the pitcher and stir gently to combine. Taste and adjust sweetness or acidity with a splash more simple syrup or lemon juice as needed.

Combine With Wine

Bruise the mint: clap the mint leaves between your hands once to release aromatics, then add to the pitcher and stir once to distribute fragrance without turning bitter.

If you want a lighter, fizzy finish, add 250 ml chilled club soda just before serving and stir gently. Otherwise skip for a still rosé presentation.

To serve, place 1/2 cup reserved ice in each wine glass (about 4 glasses). Pour the rosé mixture into glasses, dividing evenly. Garnish each glass with a thin watermelon slice or a whole strawberry on the rim and a small sprig of mint.

Serve immediately to preserve the fresh fruit aromas and crisp finish.
