Guava Base

Make guava puree
Halve 2–3 ripe guavas, scoop flesh and seeds into a blender. Add 2–3 tablespoons water and blitz until smooth. Strain through a fine mesh sieve into a bowl, pressing with the back of a spoon to extract about 1 cup of silky guava puree. Discard solids.

Combine base ingredients
In a mixing pitcher, combine 1 cup strained guava puree, 1/4 cup fresh lime juice, and 2 tablespoons simple syrup. Stir until uniform. Taste and adjust sweetness — add up to 1 tablespoon more simple syrup if the guava is tart.

To the guava-lime base, add 6 teaspoons (2 oz) white rum and 1 teaspoon elderflower liqueur if using. Stir to integrate.

Chill and carbonate
Fill four serving glasses halfway with ice (about 1 cup divided). Divide the guava-spirit mixture evenly among the glasses (about 4 oz per serving if making 2 servings). Top each glass with 1/4 cup (2 tbsp) club soda or sparkling water to give a light effervescence. Gently stir once to combine.

Garnish and serve
Garnish each glass with a thin lime wheel and a small sprig of mint. Serve immediately with a short stirring spoon or straw. For a nonalcoholic version, omit rum and elderflower and top the guava-lime base with additional sparkling water to taste.
