    Prep

    Chill a highball (tall) glass by filling it with ice and cold water while you mix the drink. If using egg white, use a very fresh egg or pasteurized egg white product.

    Dry shake

    In a cocktail shaker combine 2 oz gin, 0.75 oz fresh lemon juice, 0.75 oz simple syrup and 0.5 egg white (if using). Close the shaker and shake vigorously without ice for 10–15 seconds. This 'dry shake' emulsifies the egg white and creates a rich foam.

    Wet shake

    Add 4 ice cubes to the shaker and shake hard for 12–15 seconds until the shaker is well chilled (exterior becomes frosty). This chills and dilutes the cocktail properly.

    Prepare glass

    Dump the ice and water from the chilled highball glass and add 4 fresh ice cubes for serving.

    Strain and top

    Double-strain the mixture into the prepared highball glass over the fresh ice to remove small ice shards and any solids. Immediately top with about 2 oz cold club soda poured gently down the side of the glass to preserve the foam. Pour slowly to retain the foamy head produced by the egg white.

    Garnish and serve

    Garnish with a lemon wheel or twist on the rim. Serve immediately with a straw placed behind the foam so the first sips are a mix of foam and liquid. If you omitted egg white, the foam will be minimal but the cocktail remains refreshing.
